Overview

Tie Guan Yin (“Iron Goddess of Mercy”) is one of the most celebrated oolongs (semi-oxidised teas) of China, from Anxi in Fujian province.

Its name comes from a Buddhist legend: a devout farmer is said to have received in a dream, from the goddess Guan Yin, the location of an exceptional tea.

The leaves, partly oxidised (30 to 50% according to style) then rolled into tight bluish-green balls, open magnificently in the infusion, releasing a characteristic floral orchid scent.

Between green tea and black tea, oolong combines freshness and depth, and belongs to the noble tradition of Gongfu Cha (“the tea of mastery”).

Traditional uses

An oolong of medium oxidation, of Neutral nature. Traditionally used to transform Phlegm-Dampness gently, and to accompany rich, fatty meals.

Suited to daily use, in the spirit of a pharmacopoeia taken for pleasure. A pillar of Cantonese and Fujianese Gongfu Cha.

Preparation and traditional-use quantity
  • Gongfu Cha: 5 to 7 g in a small yixing teapot or a gaiwan (100-150 ml), water at 95°C, very short successive infusions (10 s, 15 s, 20 s, 30 s...) — can be re-infused 6 to 8 times
  • Everyday method: 3 to 5 g in a standard teapot, water at 95°C, 3 minutes for the first infusion
  • Characteristic fragrance: notes of orchid and magnolia flower, a long and complex finish
  • Companion to rich cooking: the Cantonese tradition: Tie Guan Yin during or after rich dim sum, a use attached to the transformation register
