Overview
The “Xi” format (standard size) of Chen Pi, corresponding to smaller pieces of peel from the same traditional drying and ageing.
The same matter as the Da format, presented as petals of a more modest size — handier for everyday use in infusion or in cookery, where the pieces go straight in.
Its orange-brown colour and its warm, deep scent bear witness to the same controlled ageing.
Traditional uses
The same traditional uses as the Da format: moving the Qi through the median sphere, the register of transformation (Yun Hua), transforming Phlegm-Dampness.
The standard format is preferred for daily use and for quick preparations, where the smaller pieces release their aromas faster.
Preparation and traditional-use quantity
- Decoction: 3 to 9 g, simmer for 20 minutes
- Daily infusion: a few pieces in a cup, water at a simmer, 8 to 10 minutes
- Home cooking: added to family broths, rice and marinades — a regular use in everyday cooking
Precautions
Same precautions as the Da format: moderation in cases of deficient or of settled heat.
